TOP chef Luke Dale-Roberts’ pop-up restaurant at Johannesburg boutique hotel, The Saxon, is to become permanent from May, the hotel said on Tuesday.

This would not affect Dale-Roberts’ Cape Town restaurants, The Test Kitchen — which was placed 28th in 2015’s S Pellegrino World’s 50 Best Restaurants — and The Pot Luck Club.

The Test Kitchen Pop Up, which had been running for three months, had been very successful, said Saxon spokeswoman Nicolette Fortuin. The pop-up restaurant is run by Saxon executive chef Candice Phillips and her soux chef Wynand van Wyk in collaboration with Dale-Roberts. This relationship would continue.

"I’ve personally been a longstanding admirer of Luke’s cuisine and so the initial conversation and idea around The Test Kitchen pop-up in Johannesburg was welcomed with great enthusiasm," said Saxon Hotel, Villas and Spa MD George Cohen in a statement.

"What we’ve tried to achieve with this collaboration, and the overall Saxon dining offering, is to bring newly inspired culinary concepts to Johannesburg. With the success of the current pop-up restaurant, the decision to create a permanent dining space with Luke Dale-Roberts continues the Saxon philosophy of offering unique guest experiences."

The Saxon’s restaurants — the pop-up and Five Hundred — would close in April for a complete refurbishment, reopening in May.

Dale-Roberts said in a statement that expectations for the pop-up restaurant had been "very high", however he had enjoyed cooking in the city. "To be honest, I’ve absolutely loved the energy here. The guests are excited to be here, they’re chatting to people at other tables. It’s a space that’s fun, filled with energy and shared excitement."

Dale-Roberts and Phillips were planning an autumn menu for the restaurant named Luke Dale-Roberts at the Saxon, and the award-winning chef was working with a gardener to ensure quality fresh produce at his tables.

The new restaurant is to be designed by Sandalene Dale-Roberts, Luke’s wife, who is a fashion and interior designer. Artists Mark Rautenbach and Pete Eastwood, whose work is featured in the Test Kitchen in Cape Town, have been commissioned to produce work for the Johannesburg restaurant.

Luke Dale-Roberts at The Saxon will open on May 5.
